Ingredients:
- 1 cup tamarind pulp
- 1 cup dried plums (Aloo Bukhara)
- 1 medium-sized potato, boiled and mashed
- 1 cup sugar
- 1 teaspoon black salt
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- 6 cups water
- Ice cubes
Instructions:
- In a large pot, add tamarind pulp, dried plums, and water. Bring it to a boil and then reduce the heat to low. Simmer for about 30 minutes or until the fruits are soft and the mixture is thickened.
- Strain the mixture through a fine-mesh sieve, pressing on the solids to extract all the liquid. Discard the solids.
- Add the mashed potato to the tamarind and plum liquid and mix well.
- Add sugar, black salt, cumin powder, and red chili powder. Stir until the sugar dissolves completely.
- Allow the mixture to cool to room temperature.
- Once cooled, transfer the mixture to a blender and blend until smooth.
- Strain the mixture through a fine-mesh sieve into a pitcher or jug.
- Add ice cubes to the pitcher and serve the Imli Aloo Bukhara Ka Sharbat chilled.
