Imli Aloo Bukhara Ka Sharbat is a popular Pakistani drink made from tamarind, dried plums, and potatoes. Here's a recipe for making it at home:

Ingredients:

  • 1 cup tamarind pulp
  • 1 cup dried plums (Aloo Bukhara)
  • 1 medium-sized potato, boiled and mashed
  • 1 cup sugar
  • 1 teaspoon black salt
  • 1 teaspoon cumin powder
  • 1 teaspoon red chili powder
  • 6 cups water
  • Ice cubes


Instructions:

  1. In a large pot, add tamarind pulp, dried plums, and water. Bring it to a boil and then reduce the heat to low. Simmer for about 30 minutes or until the fruits are soft and the mixture is thickened.
  2. Strain the mixture through a fine-mesh sieve, pressing on the solids to extract all the liquid. Discard the solids.
  3. Add the mashed potato to the tamarind and plum liquid and mix well.
  4. Add sugar, black salt, cumin powder, and red chili powder. Stir until the sugar dissolves completely.
  5. Allow the mixture to cool to room temperature.
  6. Once cooled, transfer the mixture to a blender and blend until smooth.
  7. Strain the mixture through a fine-mesh sieve into a pitcher or jug.
  8. Add ice cubes to the pitcher and serve the Imli Aloo Bukhara Ka Sharbat chilled.
