Suji (semolina) ke cutlets are a delicious Indian snack that can be made easily at home. Here is a recipe for suji ke cutlets:

Ingredients:

  • 1 cup semolina (suji)
  • 2 cups water
  • 1/2 cup boiled and mashed potatoes
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped capsicum
  • 1/4 cup finely chopped carrots
  • 1/4 cup chopped coriander leaves
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1/2 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala powder
  • Salt to taste
  • Oil for frying


Instructions:

  1. In a pan, dry roast the semolina on medium heat until it turns golden brown. Keep stirring continuously to avoid burning. Once done, remove from heat and set aside.

  2. In a separate pan, heat 1 tablespoon of oil and add the ginger and garlic paste. Saute for a few seconds, then add the chopped onions, capsicum, and carrots. Cook until the vegetables are tender and then add the boiled mashed potatoes. Mix well.

  3. Add the roasted semolina, red chili powder, turmeric powder, garam masala powder, and salt to the vegetable mixture. Mix well until everything is combined.

  4. Remove the mixture from the heat and allow it to cool down for a few minutes.

  5. Once cooled, take small portions of the mixture and shape them into round or oval cutlets.

  6. Heat oil in a deep frying pan on medium heat. Once the oil is hot, gently place the cutlets in the oil and fry until they turn golden brown. Flip them over to ensure even cooking.

  7. Once the cutlets are cooked on both sides, remove them from the oil and place them on a tissue paper to remove excess oil.

  8. Serve hot with mint chutney or tomato sauce.
