Samosas are a popular Indian snack that consists of a savory filling encased in a crispy pastry shell. Here's a recipe to make delicious samosas at home:

Ingredients:

For the dough:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/2 cup water

For the filling:

  • 2 cups boiled, peeled and mashed potatoes
  • 1/2 cup green peas
  • 1/2 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon red chili powder
  • 1 teaspoon salt
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped coriander leaves
  • 1/2 teaspoon amchur (dried mango powder) (optional)

For frying:

  • Vegetable oil


Instructions:

  1. To make the dough, mix the flour and salt in a large bowl. Add the oil and rub it into the flour mixture until it resembles bread crumbs. Slowly add water and knead the dough until it is smooth and pliable. Cover the dough and let it rest for 30 minutes.

  2. To make the filling, heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Add green peas and cook for 2-3 minutes. Add coriander powder, garam masala powder, red chili powder, and salt. Mix well.

  3. Add mashed potatoes and mix everything together. Cook for 2-3 minutes until the filling is dry. Add chopped coriander leaves and amchur (if using). Mix well and let the filling cool.

  4. Divide the dough into 10-12 equal parts and roll each part into a ball. Roll each ball into a thin, oval-shaped disc.

  5. Cut the disc in half and make a cone shape out of each half. Fill the cone with 2-3 tablespoons of the filling and seal the edges using a little water.

  6. Heat oil in a deep pan over medium heat. Once hot, add the samosas in small batches and fry them until golden brown and crisp. Drain on a paper towel.

  7. Serve hot with your favorite chutney or sauce.
