  • 2 green chillies, finely chopped

  • 1/2 teaspoon coriander powder
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt, to taste
  • 2 tablespoons chopped fresh coriander leaves
  • 1 tablespoon vegetable oil


Instructions:

  1. In a mixing bowl, combine the whole wheat flour, salt, and vegetable oil. Add water gradually and knead into a smooth and pliable dough. Cover with a damp cloth and let it rest for 20 minutes.

  2. In another mixing bowl, combine the mashed potatoes, chopped onion, green chillies, grated ginger, cumin powder, coriander powder, turmeric powder, red chili powder, salt, and chopped fresh coriander leaves. Mix well.

  3. Divide the dough into 8 equal parts and roll each part into a ball.

  4. Dust the rolling surface with some flour and roll one ball of dough into a small disc. Place a portion of the potato filling in the center.

  5. Gather the edges of the dough disc and bring them together to seal the filling inside. Flatten the ball and roll it out into a circular paratha.

  6. Heat a griddle or a tawa over medium heat. Place the rolled-out paratha on the griddle and cook for about 1-2 minutes on each side, or until brown spots appear.

  7. Brush the cooked paratha with some vegetable oil and cook for another 1-2 minutes on each side, or until crispy and golden brown.

  8. Repeat the process with the remaining dough and filling.

  9. Serve hot with your favorite side dish, such as yogurt or pickle.

  • Salt for rimming the glass
  • Ice
  • Lime wedges and fresh mint leaves for garnish


Instructions:

  1. Rim a glass with salt by running a lime wedge around the rim and dipping it into a small plate of salt. Fill the glass with ice and set it aside.
  2. In a cocktail shaker, add a handful of fresh mint leaves and gently muddle them to release the mint flavor.
  3. Add the tequila, fresh lime juice, simple syrup, and Triple sec or Cointreau to the shaker.
  4. Fill the shaker with ice and shake vigorously for about 15 seconds.
  5. Strain the margarita into the salt-rimmed glass filled with ice.

  • 1 tsp green chili paste

  • 1 tsp cumin seeds

For frying:

Instructions:

  1. In a mixing bowl, add flour, salt, and ghee/oil. Mix everything well until the mixture resembles breadcrumbs.

  2. Add water little by little and knead the dough. The dough should be firm and smooth. Cover the dough with a wet cloth and let it rest for 20-30 minutes.

  3. To make the filling, heat oil in a pan and add cumin seeds. Once the seeds start crackling, add ginger paste and green chili paste. Sauté for a few seconds.

  4. Add mashed potatoes, coriander powder, cumin powder, red chili powder, garam masala, and salt. Mix everything well and cook for 2-3 minutes. Remove from heat and let the filling cool.

  5. Now, divide the dough into small equal-sized balls. Roll out each ball into a small circle. Place a spoonful of the filling in the center of the circle.

  6. Bring the edges of the dough together to cover the filling completely. Pinch the edges together to seal the kachori.

  7. Heat oil in a deep frying pan on medium heat. Once the oil is hot, gently drop the kachoris in the oil.

  8. Fry the kachoris until they turn golden brown and crispy. Remove from the oil and place them on a kitchen paper towel to absorb excess oil.

  9. Serve hot with mint chutney or tamarind chutney.
